2 T butter
3 T hot water
1 tsp vanilla
2 c. powdered sugar
1/2 c. instant dry milk
3 c. fine coconut
3 ounces chocolate chips

Directions:

Melt butter in a 2 qt. saucepan. Take off heat, add hot water and vanilla. Sift powdered sugar and instant dry milk. Add to butter mixture 1/2 cup at a time. Mix well. Stir in coconut. Drop by teaspoon onto wax paper. Let stand until firm, about 10 minutes. Melt chocolate chips over double boiler or in microwave, 30 seconds at a time. Swirl chocolate on top of coconut cookies with a teaspoon. Chill. Makes about 3 dozen cookies.

This recipe always reminds me of Mom making tons of these for church and Bruce's dog Josh eating most of them. Mom thought they were all safe on the table, she even pushed all the chairs up tight, but Josh was resourceful!
