1 1/2 c. all-purpose flour
3/4 c. sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
1/4 c. shortening
3/4 c. milk
1 egg

Topping
1/3 c. packed brown sugar
1/4 c. all-purpose flour
1/2 tsp. cinnamon
3 T cold butter

Preheat oven to 375º. Grease round layer pan 9x1½ or square pan 8x8x2 or 9x9x2. Blend all ingredients except topping. Beat vigorously for ½ minute. Spread evenly in pan. Mix topping ingredients until crumbly. Sprinkle topping over batter. Bake 25-30 minutes, or until toothpick inserted in center comes out clean. A variation would be to pour half the batter into the pan and add a cinnamon and brown sugar mix across the top before pouring the rest of the batter in, for a streusel in the middle!
