1 C Water
½ C Butter or Margarine
¼ tsp Salt
1 C Flour
4 Eggs

Directions:

Preheat oven to 375º. Lightly grease large cookie sheet.
In 2 quart saucepan over medium heat, heat water, butter, and salt until butter melts and mixture boils. Remove saucepan from heat. Add flour all at once. With wooden spoon, vigorously stir until mixture leaves side of pan and forms a ball. Add eggs, one at a time, beating well with wooden spoon after each addition.
Drop by heaping tablespoons into mounds. With moistened finger, gently smooth batter to round slightly.
For 12 puffs, bake for 40 minutes. For 24 smaller puffs, bake for 30 minutes. Remove from baking sheet and let cool on cooling rack. Gently cut each puff in half horizontally with a bread knife.
 

Almond Cream Filling

1 C Heavy Cream
3 3/4 oz package Instant Vanilla Pudding
1 ¼ C Milk
½ tsp Almond Extract

Directions:

In mixing bowl, beat heavy cream until soft peaks form. Set aside.
Prepare pudding as label directs, using only 1 ¼ C milk.
With rubber spatula, gently fold whipped cream and almond extract into pudding.
Scoop even amounts of filling into each puff.
 

Chocolate Glaze

½ C Semi-Sweet Chocolate Pieces
1 tbsp Butter or Margarine
1 ½ tsp Milk
1 ½ tsp Light Corn Syrup

In heavy 1 quart saucepan over low heat, heat all ingredients until smooth, stirring occasionally.
Top each puff with small amount of chocolate mixture.
Store finished puffs in refrigerator.
