2-3 medium potatoes, peeled and cubed into bite-sized pieces
1 10-ounce package frozen chopped broccoli
1/2 cup chopped carrot
1/4 cup chopped onion
1 tablespoon parsley
4 cups vegetable broth, I use Knorr boullion cubes
pepper and salt
1 1/2 cups milk
2 tablespoons flour
4 ounces cheese whiz or Velveeta

Directions:
Directions:
In large saucepan, combine potatoes, broccoli, carrots, onion, parsley, and broth. Bring to a boil; reduce heat to low. Cover and simmer about 10 minutes until potatoes are tender.
In small bowl, whisk flour and milk. Slowly pour into veggie mixture, stirring constantly. Cook over medium-high heat until slightly thickened; about 5 minutes. Add cheese and stir until melted, about 3 minutes.
