2 Pounds ground beef
1 Sweet onion peeled and chopped
1 Red bell pepper, seeded and chopped
3 Garlic cloves or minced
1 Cup frozen corn
15oz Crushed tomatoes (1Can)
4oz Crushed or chopped green chiles (1Can)
2 Teaspoon chili powder
1 Teaspoon ground cumin
1 Teaspoon salt & pepper
1½ Cup shredded cheddar cheese for the Tamale Top
2 Cups corn flour
2 Teaspoon baking powder
1 Teaspoon salt
2 Cups chicken broth
½ Cup melted butter
½ Cup shredded cheddar cheese

Preheat the oven to 400ºF. Spray two 9-inch pans with nonstick cooking spray. Place a large sauté pan over medium heat. Add ground beef and break into small pieces with a wooden spoon. Brown the meat then push it to the side and add the chopped onions, bell peppers, and garlic. Cook until the onion has softened. Then mix in the frozen corn, crushed tomatoes, green chiles, chili powder, cumin, salt & pepper, and cheese. Stir well and turn off the heat. Mix the cornflour, baking powder, and salt in a large bowl. Add in the chicken broth and butter. Whisk until smooth, then stir in cheese.
Pour the meat filling into the prepared pans, then pour the corn butter evenly over the top and spread to the edge of the pan. Bake for 30- 40 minutes until you can stick a toothpick in the top and it comes out dry.

When I arrived in Dallas to start my life, I knew there was no turning back now. My girls were depending on me to do well. So, I thought, "what the hell", I'm going for it. And, although I didn't know a soul there, I did what I set out to do. But when I sat down and thought about it, all alone in this new city, I quickly thought to myself "What have I done and what did I get myself into?" And, WHY?
