3 Cups chicken broth
2 Cups diced peeled potatoes
1 Cup diced carrots
1 Cup celery
½ Cup diced onions
½ Teaspoon salt & pepper
¼ Cup butter cubed
⅓ Cup all purpose flour
2 Cups of whole milk
2 Cups shredded cheddar cheese

In a saucepan, bring chicken broth to a boil. Reduce heat. Add the potatoes, carrots, celery, onions, and salt & pepper. Cover and simmer for 12-15 minutes or until vegetables are tender. Melt butter in a medium saucepan. Stir in flour until smooth, gradually stir in milk, and bring to a boil over medium heat. Cook and stir for 2 to 3 minutes or until thickened. Reduce the heat. Add cheese and stir until melted. Add broth and the chicken. Cook and stir until heated throughout.
