Crust: 1 Box Pillsbury pie crust
⅓ Cup butter or margarine
⅓ Cup chopped onions
⅓ Cup all purpose flour
½ Teaspoon salt & black pepper
1 Can Chicken broth
½ Cup of milk
2 Cups shredded cooked chicken or turkey
2 Cups mixed vegetables

Heat oven to 425ºF. Prepare pie crust using a 9-inch glass pie pan or muffin pan. In a saucepan, melt butter over medium heat. Add onions, cook 2 minutes stirring frequently until tender. Stir in flour, salt & pepper until well blended. Gradually stir in broth and milk cooking and stirring until bubbly and thickened. Stir in chicken and mixed vegetables, then remove from heat. Spoon chicken mixture into crust-lined pan. Use the second crust to place on top of the mixture. Crimp the edges for a sure seal, or flute them for an attractive appearance. Cut slits in several places on the top of the crust to allow it to "breathe while cooking". Bake 30 to 40 minutes or until crust is golden brown. During the last 15 to 20 minutes of baking, cover the edge with strips of foil to prevent excessive browning. Let stand 5 minutes before serving.
