4 Cups of chopped yellow onions
¼ Cup olive oil add a little extra for chicken
¼ Cup minced garlic cloves
2 Red bell peppers chopped and diced
2 Yellow bell pepper chopped and diced
1 Teaspoon Chili powder
1 Teaspoon ground cumin
¼ Teaspoon dried red peppers
¼ Teaspoon Cayenne peppers
2 Teaspoon Salt
2 Cans puree tomatoes
¼ Cup minced fresh basil leaves
4-5 Spilt chicken breast bone- in skin on
1 Teaspoon freshly ground black pepper
½ Cup chopped onions
½ Cup cheddar cheese
½ Cup sour cream

Directions:
Directions:
Cook the onions in the olive oil over medium- heat for 10-15 minutes, or until translucent. Add the garlic and cook for 1 more minute. Add the bell pepper, red pepper flakes, salt & pepper. Cook for 5 minutes, crush the tomatoes by hand or in batches with a food processor fitted with steel blade on pulse 6 to 8 minutes. Add to the pot with the basil bring to a boil then reduce the heat and simmer. Uncovered for about 30 minutes; stirring occasionally.

Pre-heat oven to 350º F. Rub the chicken breast with olive oil, and place them on a baking sheet. Sprinkle generously with salt and pepper. Roast the chicken for 35 to 45 minutes, until cooked. Let cool and slightly separate the meat from the bone and skin and cut into chunks. Add to the chili and simmer. Uncovered for another 20 minutes and serve with the topping or refrigerate and reheat gently before serving.

I will never forget when my life changed forever in 1995. As my mother stood in my kitchen going back and forth asking herself, "Should I leave or should I stay?", before long her pacing began making my heart race. As we went over and over the same conversation, I started feeling irritated. I said to her, "go if you are going to go, but if you don't want to go then please just go sit down and get out of my face". And at that moment, she gave me a look of disgust. Standing there counting on me for guidance, she said, "I'm just going to go". As she walked out the door asking me for a kiss, who would have ever thought I would never see her again!!! She turned to me and said, "You're going to miss me when I'm gone." That same night, I woke up from my sleep to banging at the door with a faint and panicked cry. "Kisha, open up the door!", the woman said. "It's your mama... I think she might be gone!!!" But WHY?
