½ cup flour
¼ cup cocoa powder
3 tbsp. sugar
6 tbsp. unsalted butter, room temperature
6 oz. dark chocolate
6 tbsp. creamy peanut butter
1½ tbsp. corn syrup
2½ oz. white chocolate
5 tbsp. cream
3 tbsp. butter. room temperature
6 tbsp. peanut butter
¾ cup icing sugar
¼ tsp. salt
crushed peanuts, to garnish

Directions:

Sift together flour, cocoa powder and sugar in a bowl. Add 6 tbsp. unsalted butter and work into mixture. Spoon a little of the mixture into 12 cupcake liners and tamper down. Bake in 350º oven for 12 minutes. Remove from oven and let cool completely before you fill them. Measure dark chocolate with 6 tbsp. peanut butter and corn syrup and place over water bath to melt chocolate. Pour a thin layer over each crust until coated. Shake to level truffle layer. Melt white chocolate and cream together over water bath, remove and let cool slightly. Mix together soft butter and peanut butter then add white chocolate cream mixture and blend together. Add icing sugar and salt to mixture and whisk until smooth. Place piping bag with plain tip in glass to fill piping bag with fluid mixture. Pipe a layer over dark chocolate truffle mix and then top with a layer of dark chocolate truffle mix. Top with crushed peanuts then place in fridge for a few hours until fully set.
