4 Tbsp. Olive Oil
1 cup chopped parsley
1 cup finely chopped onion
3 large cloves garlic - minced
Package of mushrooms cut in small pieces
1¼ tsp garlic salt
¼ tsp pepper
½ tsp oregano
⅛ tsp nutmeg
1/16 tsp cloves
½ tsp thyme
¼ tsp sage
½ tsp salt
½ lb ground beef (use a 1 lb if you prefer meatier sauce)
3 Italian sausages out of casing (or ¼ lb of pork sausage or Italian turkey sausage)
3 - 8oz cans tomato sauce
1 - 6 oz can tomato paste
1.5 cup stock or water with 1 bouillon cube

In a 3 quart pot, sauté parsley, onion, minced garlic, mushrooms, ¼ tsp garlic salt and ¼ tsp pepper in olive oil. Cover and simmer. Crumble meat into pan and add 1 tsp garlic salt, ⅛ tsp pepper, ¼ tsp oregano. As meat cooks, break into small pieces with fork. Cook 10 minutes, pour off fat (grass fed beef tends not to leave fat), add to simmering sauté pot. Add tomato sauce, tomato paste and stock. Stir and let come to slow boil. Cover and simmer 1 hour, stirring frequently. Finally, add nutmeg, cloves, thyme, ¼ tsp oregano, sage and salt. Simmer another hour, stirring frequently.

This Italian sauce is my great grandmother's. It takes awhile but is so worth it! I will often double the recipe and freeze half for future use. Can be used with any dish requiring meat sauce.
