4 eggs
1 c. sugar
2/3 c. oil
2 c. flour
1 tsp. vanilla
1 tsp. baking powder
1 can blueberry (or any flavor) pie filling
cinnamon and sugar

Directions:
Directions:
Mix first 6 ingredients in bowl. Spread half of batter in a 9 x 13 baking pan. Drop blobs of pie filling on batter in pan. Top with remaining batter. Sprinkle with cinnamon and sugar.

Bake at 350º for 25-30 minutes until top of cake is very slightly browned. Sprinkle with additional cinnamon and sugar.

This is the easiest "coffee" cake I have ever made. I love the satiny batter and the flavor of the cake when it's baked. Whenever I have to take a cake to a potluck brunch, I go for this recipe because someone always comments on how good it is. Sorry to all you family members who are not fruit lovers!
