2 medium cucumbers
2 green onions
3 Tbsp. rice vinegar
1 tsp. sugar
2 tsp. sesame oil
½ tsp. salt
1 ½ Tbsp. chopped unsalted, dry-roasted peanuts (optional)

Directions:
Directions:
1. Peel and thinly slice cucumbers. Slice green onions.

2. Mix vinegar, sugar, sesame oil, and salt in a medium bowl. Add cucumber slices and toss to coat.

3. Top with green onions and peanuts (if using). The salad can be served immediately or refrigerated for up to 3 hours.
