4-5 large potatoes
½-1 cup of milk
½ stick of butter
2 Tbsp olive oil (for browning meat)
1 cup avocado oil (for frying pies)
1 lb ground beef (or ground turkey)
curry powder
black pepper
salt

For pie dough:
4 cups all purpose flour
1 tsp baking powder
½ tsp salt
¼ cup butter
1 cup hot water

Filling Directions:
Get the potatoes into boiling water until they are cooked (approximately 12 min). Season meat with salt and pepper and brown your meat. Check potatoes with a fork to test (should be soft and go in easily). Mix meat and potatoes together in a bowl. Add add milk and butter. The idea is to have a creamy mashed potato like consistency. Next (and this is the best part) add curry powder salt and pepper to taste. I’d say a good starting point for the curry powder is about 3-4 tsp and then coat the meat potato mixture with a round of salt and pepper. Be liberal and trust your instincts that it will taste good.

Pie Dough Directions:
First mix dry ingredients with a fork or whisk. Next add butter making sure to smash butter up so it mixes evenly, finally add water and knead with hands until you have a Playdoh-ish consistency. Divide dough up into 12 even gobs and then make these into balls.

Putting it All Together:
Coat your countertop with a sprinkle of flour (to avoid stickiness) and roll out a ball of the dough to be about a 6 inch circle. Add a couple spoonfuls of our pie filling to one half of the circle (towards the middle) then fold in half like a taco and press the edges together with a fork. Heat the avocado oil up on medium low, stove setting and fry until each side is golden brown. As each pie is finished, place on a plate with a napkin to absorb the extra oil.

Food tip: It goes really well with sour cream and chutney. This is actually a recipe that my grandma used to make in her home country of Trinidad in the West Indies. Aloo (Potato) Pies. I recreated my version from memory and they are a hit at parties.
