2-3 outer stalks of celery
Light-colored inner stalks and leaves from one bunch of celery
⅓ cup fresh cilantro
2 green onions
1 can (15 oz.) chickpeas
2 Tbsp. olive oil
1 Tbsp. rice vinegar
½ tsp. salt

Directions:
Directions:
1. Chop the celery stalks, celery leaves, and cilantro. Thinly slice the green onions. Place in a medium bowl.

2. Drain and rinse the chickpeas and add to the salad.

3. Add the olive oil, vinegar, and salt and toss well. Serve at room temperature.
