3 c. white or wheat flour
2 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 15 oz. can pumpkin puree
1 c. canola oil
2 c. sugar
½ c. unsweetened applesauce
4 eggs
1½ c. chocolate chips





Directions:
Directions:
Combine flour, baking powder, baking soda, salt, and cinnamon in a large bowl. Mix well. Beat pumpkin, oil, sugar, applesauce, and eggs in a separate mixing bowl until smooth. Add flour mixture gradually and stir until just moistened. Gently fold in chocolate chips. Line muffin tins with paper liners and fill three-fourths full. Bake 400º for 20 - 25 minutes. Makes 24 muffins.

These can be frozen and then microwaved for 25 seconds or so and will be just like hot out of the oven.
