Roasted Zucchini Shrimp "Pasta" Recipe

2 zucchini
1 bell pepper
2 lemons
5½ Tbsp of olive oil
20 oz of Shrimp (preferably wild caught)
1 tsp chili oil or flakes
salt and pepper

Directions:
Directions:
Begin by preheating the over to 400º

Then zest 1 tsp of zest from a lemon, cut the lemon into quarters. Trim and clean the ends off of zucchini. With a vegetable peeler, shave zucchini lengthwise into thin ribbons. Do not use the seeds/core. With the yellow bell pepper, slice thinly and be sure to remove the seeds and the pith. Set aside.

Next wash, peel, and devein shrimp. Be sure to pat the shrimp dry after rinsing and season well with salt and pepper.

Coat the zucchini with olive oil and half the lemon zest. Season well with salt and pepper. Add in the juice from a quarter slice of lemon. Toss to coat.

Mix the shrimp, zucchini, and bell peppers together in a large bowl and place in an oven-safe pan or baking sheet.

Place pan inside oven and cook for 10 to 15 minutes, until shrimp are pink and firm.

Once everything is cooked, plate and serve immediately. You can also add additional lemon to your preference. I also enjoy this dish cold, like a "pasta" salad.

I am a public school teacher for Novato Unified School District. I have been teaching for close to 10 years now and am originally from Orange County, California. I have been living in the Bay Area now for 5 years and have enjoyed every minute of my time here. I never intended to become a teacher, it was a passion that naturally developed after traveling around Europe and Asia in my early twenties.

Teaching in Novato has been especially rewarding as this is a really special community that believes in public education and its teachers. From the minute I moved up here, I was welcomed with big smiles and open hearts.

I currently live in Berkeley, right by the campus. Some hobbies of mine include traveling, yoga, hiking, working out, and wine. I am passionate about healthy eating and living an active lifestyle. I hope this dish captures this and that you enjoy it, preferably with a nice cocktail or cold glass of wine under the gorgeous sunshine of Marin.
