1 small onion
1 medium or 2 small heirloom tomatoes
¼ tsp. curry powder
⅛ tsp. cayenne pepper
2 oz. shredded sharp cheddar cheese
4 slices whole wheat bread

Directions:

1. Cut the onion in half from top to bottom, then slice into thin half-rings. Slice the tomato.

2. Heat olive oil in a medium pan over low heat. Add the onions and cook, stirring occasionally, until they are golden and the edges are brown (6-8 minutes). Stir in the curry powder and cayenne.

3. Lay out two slices of bread, and divide half the cheese between them. Top each with the cooked onions, tomato slices, then the rest of the cheese. Finish each with another slice of bread.

4. Wipe out the pan, return to medium-low heat, and add a small amount of butter. Place one of the sandwiches in the pan and press down with the back of a spatula or a smaller pan. Grill until the underside is brown and the cheese is partially melted (3-4 minutes). Flip the sandwich, adding more butter if necessary, and grill until the second side is lightly brown (2-3 minutes). Repeat with the second sandwich, then slice in half and serve hot.

Grilled cheese and tomato is one of my favorite lunches. This version is a little more "fancy" for grown-ups or kids with sophisticated pallets. Serve with carrot sticks or other raw vegetables.

Shredding the cheese helps it to melt. If you prefer thicker, less melted cheese, you can also slice it thinly. I like to use butter to add more flavor and crispiness, but any cooking spray also works or cook it on a non-stick griddle.
