Irish Soda Bread Recipe

4 c. sifted flour
¼ c. sugar
1 tsp. salt
1 egg
1 tsp. baking soda
½ tsp. cream of tartar
1 tsp. baking powder
¼ c. butter
1⅓ c. buttermilk
1 c. raisins

Directions:
Directions:
Preheat oven to 375º. Butter 1½ qt. round casserole dish. In a large bowl stir together dry ingredients EXCEPT baking soda. Cut in butter for consistency of coarse cornmeal. Stir in raisins.

In a separate bowl, combine buttermilk, egg, and soda. Stir wet mixture into dry until just moistened. Turn out onto floured board and knead gently until dough comes together and is a smooth rolled ball. Place dough ball in prepared casserole dish. Cut an "X" into top of loaf about ½ inch deep with a sharp knife or razor blade running almost to the ends and sides of loaf.

Bake 50 minutes. Remove from oven and cool in dish for 10 minutes. Turn out onto rack and cool before serving.

Many soda bread recipes are dry but this one is not. You can include 1 tsp. caraway seeds, if you like them. I prefer not to use them.
