½ c. orange juice
½ c. soy sauce
¼ c. vegetable oil
2 T. butter
½ c. brown sugar
1 tsp. minced or grated fresh ginger
1 small onion, diced
2 -3 garlic cloves, minced
1 lb. pork, cut into thin strips (boneless pork chops, leftover roast)
1 tsp. cornstarch
3 tsp. water
1 c. snow peas about 3 oz.
2 scallions thinly sliced
salt and pepper to taste
hot sauce if you like it spicy
1 lb. thin egg noodles, cooked

Saute ginger, garlic and onion in large skillet until onions are translucent. Add soy sauce, brown sugar, orange juice and meat, marinate about 30 minutes. Cook egg noodles while you wait for the meat to absorb flavorings. Cook meat mixture until heated and meat is cooked, about 5-8 minutes. depending on how thick meat is cut. Make cornstarch/water slurry, add to pan and cook 2-3 minutes to thicken sauce. Add snow peas and cook 3-5 more minutes. Pour meat mixture over noodles and garnish with scallions. Serve.

This is my "go to" recipe for leftover pork roast or pork chops. If you use precooked meat, do not marinate for 30 minutes, just proceed with recipe reducing cooking time because the meat is already cooked. You can use any noodles you like--try it with Chinese soba or spaghetti.
