1/4 c. dry white wine
2 T, white wine vinegar
2 T. shallots, minced
1 T. heavy cream
1 c. cold unsalted butter, cubed
1 T. fresh lemon juice
2 tsp. fresh thyme, minced
2 tsp. fresh chives, minced
2 tsp. fresh parsley, minced
salt and pepper to taste

Reduce the wine, vinegar and shallots over medium high heat, till the liquid is reduced by half, about 2-4 minutes. Add the heavy cream and simmer till it is also reduced by half. Off the heat whisk in the butter about 2 T. at a time till melted. Stir the remaining ingredients into the butter mixture. Season to taste with salt and pepper. Keep the sauce on very low heat or in a bowl over warm water. Serve the sauce right away.
