3 c. stuffing mix
½ c. melted butter
1 can Campbell's cream of chicken soup
2 medium summer squash, shredded, about 2 cups
2 small zucchini, shredded, about 2 cups
1 small carrot, shredded, about ⅓ cup
½ c. sour cream
½ c. shredded cheddar cheese

Directions:
Directions:
Stir the stuffing and butter in a large bowl. Reserve ½ cup of stuffing for the top. Spoon the remaining mixture into a 2 quart shallow baking dish. Stir all other ingredients together. Spread over the stuffing mixture and sprinkle the reserved stuffing over the top. If you are a cheese lover, top with more grated cheese. Bake at 350º for 40 minutes or until mixture is hot and bubbly.
