3 Medium Russet Potatoes
½ Onion
1 Large Egg
1½ T. Flour
1 t. Salt
½ t. Pepper
½ C. Oil for frying

Directions:
Directions:
Grate the onion and squeeze out extra juice. Combine with beaten egg, salt & pepper. Peel potatoes and shred on a box grater for the best results. Squeeze out as much liquid as possible (really important)!
Combine with onion mixture, sprinkle with the flour and mix well.

In a cast iron skillet, heat approximately ½ cup oil until hot. Place large spoonfuls of the potato mixture into the hot oil, pressing down to form a ¼ - ½ inch thick patties. Brown on one side, turn and brown on the other. Drain on paper towels. Lightly sprinkle with salt if desired. Serve hot!
