1 Tbsp olive oil
1 cup diced onion
2 cloves garlic, minced
2 cups cauliflower florets
2 cups stock

Garnish
1 tsp finely chopped cilantro stems
1 tsp crispy shallots
pinch of red pepper

Directions:
Directions:
Heat oil, add garlic and onions, cook until translucent not brown. Add cauliflower and cook for 4 mins string all the time. Add stock, bring to a boil, simmer for ten minutes until the cauliflower is fork tender. Puree in blender until smooth and creamy. Pour into serving bowls and top with garnish.

Crispy Shallots: Peel 3 shallots, slice lengthwise, about 1/8”thick. Place 1 cup of oil & sliced shallots into a small saucepan. Cook on low heat until they slowly become brown, about 20 mins. It is essential to start the shallots in cold oil. Drain the shallots & dry on paper towels, sprinkle lightly with salt. They will become crispy once they are cool. Store in airtight container. These are a wonderful garnish for soups &salads & well worth the 20 mins to have this on hand in your pantry.

Food Fact: Cauliflower is an amazing source of antioxidants with tons of vitamin C. It is well-known for its anti-inflammatory effects that boost our immune health and reduce the risk of heart disease and cancer. It is a healthy and delicious substitute for potatoes or rice because its rich, creamy and very filling.

Food Tip: Make this batch at the start of the week and when you have your fill, you can use the soup as a base for new dishes. Add sautéed mushrooms to make a creamy mushroom soup or fry some curry powder in olive oil to make a curry soup. It also works well thickened with a bit of flour as a pasta or casserole sauce.
