1 tsp vanilla
⅔ or 1 cup pecans

mix all of the ingredients and put in an unbaked pie crust. Cook for 30 to 45 minutes at 350º.

Like all pecan pies, the cooking time for it to set depends on the humidity on that day. If you cook it until the crust is brown, its probably going to set up. If not, do like the Iron Chefs in San Antonio do, serve it anyway and call it a pecan cobbler.
