8 chicken thighs (you can also use a whole chicken)
2-3 tbsp olive oil
1 tsp dried basil
1 tsp dried oregano
1 tsp dried thyme
1 tsp garlic powder
1 tsp salt
½ tsp black pepper

Directions:
Directions:
Preheat oven to 415º. Mix the olive oil and all the spices. Arrange the chicken thighs on a rimmed baking sheet. You can place chicken directly on baking sheet or you can place foil down first and then chicken thighs. Once thighs are arranged on baking sheet, brush some of the seasoned oil on each of the thighs. Cook uncovered for 60-70 minutes. Chicken should be nice and crispy when done. Pair chicken with baked or roasted sweet potatoes and vegetable of your choice.

Note: You can use different spices for different flavors. I sometimes use Mexican spices like cumin and chili powder. Really anything works so experiment and have fun!
