1 box strawberry cake mix
1 c. water
1 c. oil
3 large eggs
1 box strawberry jello
1 c. strawberries, mashed after defrosting

Icing:
1 box sifted powdered sugar
1 (8 oz.) cream cheese, softened
½ c. drained frozen strawberries
½ c. coconut
½ c. chopped nuts
Mix all together. (I like to refrigerate before icing)

Directions:
Combine oil, water, and eggs; beat well. Prepare pans ( 2 - 9" pans or 3 8" pans). Grease, flour - line bottom with wax paper (Turn pan upside down, place wax paper on top. Using scissors, cut around outside of pan.) Place on top of greased and flour. Add jello and cake mix to liquids. Beat 2 minutes. Pour into pan ⅔ way up sides. Pound to remove air bubbles. Bake until center is done and sides are coming away from edges of pan. Rest in pan 5 minutes before removing. Cool before icing.

Cake freezes well.

I sometimes use store bought strawberry icing to cover cake to seal before using other icing. To make a big splash, add fresh strawberries to top.
