1¼ cups sugar
½ cup butter softened
2 eggs
1½ cups mashed very ripe bananas ( 3 to 4 medium)
½ cup buttermilk
1 teaspoon vanilla
2½ cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts, if desired

1. Heat oven to 350º, and grease the bottoms of 2 (8x4 inch) loaf pans or 1 ( 9x5 inch) loaf pan.
2. Mash the bananas and chop the nuts.
3. In large bowl, mix sugar and butter. Add eggs, bananas, buttermilk and vanilla; beat with electric mixer on medium speed until smooth.
4. Stir in flour, baking soda, salt and nuts just until moistened.
5. Pour into pans,
6. Bake 1 hour to 1¼ hours, or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans to cooling rack. Cool about 1 hour before slicing

This can also be baked in 24 muffin cups

Since I do not use enough buttermilk before it goes bad, I buy the buttermilk powder in the baking isle that I reconstitute with water when needed, or you can use regular milk that you have added 1 tsp of lemon juice or vinegar to.
