Chicken Patties
4 boneless, skinless chicken breasts, cut into manageable cubes.
3 slices sandwhich bread, crusts cut off
6 Tbsp cold butter, cut into slices
¼ cup milk or cream
¼ tsp nutmeg
¼ tsp salt
⅛ tsp cayenne pepper
¼ cup flour
1 egg, beaten with 1 tbsp water added
1 cup dried bread crumbs, unflavored

Master Hollandaise
2 egg yolks
¼ cup butter
3 Tbsp boiling water
2 Tbsp lemon juice
¼ tsp salt
dash Cayenne pepper

Chicken Patties
Pulse bread in food processor until crumbly, 15 seconds. Add chicken and butter with cream. Process mixture for approximately 30 seconds until the mix is like a loose paste. Note, avoid overfilling machine or over-processing mixture as it will cause a tougher result. By large spoonfuls, make mixture into patties. Then dredge in flour, dip in egg bath and roll in breadcrumbs. Heat oit/butter in frying pan over medium/medium-high heat and cook 4 minutes on each side until brown and crispy.

Master Hollandaise
In top of double boiler, whisk together yolks with the boiling water. Cook over hot water until slightly thickened. whisk and scrape pan often with small rubber scraper. Beat in butter by the tblsp with wire whisk until sauce has thickened enough to see the bottom of the pan when you draw your scraper through the mixture. Lastly, stir in your seasonings and lemon juice. Note that the sauce will not continue to thicken after adding the lemon juice.
