1 T olive oil
2 [4 oz] beef sirloin steaks [1/2 to 3/4 inch thick]
1/4 tsp salt
1/4 tsp pepper
1 cup frozen bell pepper and onion mix, or 1/2 cup sliced red bell pepper and 1/2 cup sliced onion
1/2 cup canned Italian-style diced tomatoes
2 T white wine or balsamic vinegar
1/4 tsp crushed red pepper
2 T shredded Parmesan cheese

Directions:

Heat oil in large nonstick skillet over high heat until hot. Sprinkle steaks with salt and pepper, cook 4 minutes for medium-rare, turning once. Remove steaks, cover loosely with foil to keep warm.
Add bell pepper mix to skillet; cook and stir 1 to 2 minutes or until beginning to brown. Add tomatoes, white wine and crushed red pepper, cook 2 minutes or until liquid has almost completely evaporated -stirring occasionally. Spoon over steaks, sprinkle with cheese.
