4 potatoes, peeled & diced into 1" chunks
1 onion minced
1 tsp salt
1/4 tsp pepper
2 cloves garlic smashed
1 c water
3 c chicken stock
3 bay leaves


2 tbsp flour
1/2 c fat free milk
1/2 c 1/2 & 1/2 or heavy cream
2 tbsp butter

Directions:
Directions:
Place first 8 ingredients in cooker. Close cover securely. Place pressure regulator on vent pipe an cook 5 minutes with pressure regulator rocking slowly. Let pressure drop of its own accord. Moisten flour with part of milk to make a slurry. Beat until smooth and stir in remaining milk. Stir mixture and margarine into soup and simmer, uncovered, to thicken.

I usually fry up bacon separately and top off the soup with it. You can also add shredded cheddar cheese on top.
