1 lb sausage
12 eggs
1 cup pizza sauce
pinch/dash of salt and pepper
½ tsp red pepper flakes
½ green bell pepper, sliced
6-7 small mushrooms, sliced
6-8 large or 12-15 small pepperoni slices

Directions:
Directions:
Preheat oven to 350º. Heat large cast iron skillet over medium heat. Add sausage and cook thoroughly, making sure to break up sausage into small pieces. Spread the sausage evenly over the bottom of the skillet. Turn down heat to medium-low.

In a large bowl, mix together the eggs, pizza sauce, salt, pepper and red pepper flakes. Once all combined, pour the mixture into the skillet. Cook over medium-low heat for about 5 minutes, without stirring the mixture.

Turn the burner off. Top with mushrooms, bell peppers and pepperoni. Place the skillet in the oven for 20 minutes. Let the finished frittata sit for 10 minutes before slicing.

Some suggestions...You can use any sausage of your liking. We like the the pork breakfast sausage from Whole Foods. We use the small pepperoni slices produced by Wellshire Farms. We carefully slide the entire frittata out of the skillet before slicing.
