2 c. flour
¼ c. sugar
1 tsp. baking powder
¼ tsp. baking soda
½ tsp. kosher salt
1 stick unsalted butter, FROZEN
½ c. plain Greek yogurt
1 egg

Directions:
Directions:
Preheat oven 400º with rack in middle of the oven.

Mix flour, sugar, baking powder, baking soda, and salt in food processor bowl. Chop frozen butter into cubes and add to dry ingredients in food processor bowl. Pulse until butter chunks are pea-sized. Don't over process; this only takes a few pulses.

In a mixing bowl, whisk yogurt and egg until smooth.

Stir flour mixture into yogurt mixture until large dough clumps form. Use your hands to press the dough into a ball. (The dough will be sticky in places, and there may not seem to be enough liquid at first. As you press, the dough will come together.)

Dump mixture onto a silicon baking sheet dusted with flour and press into an 8-inch circle. Use a knife to cut into 8 wedges and separate wedges at least 1 inch apart. Place silicone baking sheet onto cookie sheet and bake 15 minutes until golden.

NOTES:
Don't overwork the dough. Scones will be lighter.
Work quickly, so butter doesn't get too soft. Scones will be fluffier.

Optional:
Add 1 tsp. vanilla, almond, coconut or lemon extract. to yogurt mixture for extra flavor.
Add chopped nuts, dried or fresh fruit, baking chips, etc., to the dry ingredients before adding to the yogurt mixture. Add a sprinkle of turbinado sugar on top before baking for sparkle and crunch.
