1 cup currants
1 cup raisins
1-1/2 cups butter
1-1/2 cups white sugar
1/2 cup corn syrup
6 eggs
4 tsp grated orange rind
1 tsp grated lemon rind
3-1/2 cups flour
1 tsp salt
1 tsp baking powder
1/2 cup citrus peel

Directions:
Grease and flour a tube pan. Preheat oven to 300ºF. Wash currants in warm water, drain, spread in a covered dish. and heat in oven for 10 min. In a bowl, soak raisins in milk. Cream butter very well. Add sugar and syrup and beat until fluffy. Add eggs one at a time, and both rinds. Sift in flour, salt, and baking powder. Fold in currants, raisins, and peel. Pour into pan and bake for 1-3/4 hour. Store for up to 3 weeks. (Freezes very well)
