1 gallon whole or 2% milk
¼ c. live culture store bought plain yogurt or prepared yogurt starter

In a large stock pot, slowly bring milk to a boil, stirring constantly to prevent scorching. Boil for 8-10 minutes, then remove from heat, cover with a lid and bring down to nearly a warm, but not hot temperature over several hours. Once cooled, whisk in yogurt starter. Cover again, and place in a cool oven overnight to serve as an incubator while the milk ferments. In the morning, once fermented and thickened mix well to enjoy traditional yogurt, or drain through cheese cloth until the consistency of Greek yogurt. Refrigerate until cold and serve. Mix in honey, cinnamon or fruit preserves for flavoring if desired. Reserve ¼ C. of plain yogurt to serve as the starter for the next batch.
