20 oz. can crushed pineapple, drained
½ c. white sugar
2 T. cornstarch
¼ c. cold water
2 eggs, lightly beaten
1 T. vanilla extract
1 T. butter
1 tsp. ground cinnamon

Directions:
Directions:
Preheat oven to 350 degrees F. Grease a 8" x 8” baking dish. Mix the pineapple, sugar, cornstarch, water, eggs and vanilla. Pour mixture into the pan, then top with pats of butter. Sprinkle with cinnamon. Bake for 1 hour, serve warm. Makes a great side dish at brunch, or with a ham, or as dessert with a topping of whipped cream.
