1 c. sugar
4 tbsp. flour
⅛ tsp. salt
2 c. milk
4 eggs (separated)
1 tsp. vanilla
2 c. dried apricots
1 baked pie crust

Directions:
Directions:
Mix sugar, flour, and salt. Stir in milk gradually. Add beaten egg yolks and cook slowly over low heat. Cook until thick. It will be clear like lemon pie filling. Cool. Add vanilla. Pour into baked pie crust.

Stew apricots with a little sugar and water until tender. Mash and spoon over pie filling.

Make meringue from egg whites and spread to cover apricots. Brown slightly.

I've never seen this recipe in a recipe book. It was passed down by an old family friend. It's special to me because it brings back fond memories of quiet Sunday afternoons at her house.
