Toffee pan preparation


Ingredients:

* 2 12oz pkgs milk chocolate chips(divided)
* 1 lb coarsley chopped walnuts(divided)

Line a cookie sheet with aluminum foil. Spread half of the walnuts evenly on the foil. Next spread one 12oz pkg of chocolate chips over the walnuts. Save the rest of the walnuts and chocolate chips for the top layer of the toffee.

* 1 lb. of butter
* 2 cups white sugar

Directions:

Melt the butter in a 3 quart sauce pan. When the butter is completely melted add the sugar slowly stirring constantly. Continue to stir ingredients for about 20 minutes or longer on medium heat until the consistency of the mixture changes. It will separate and then come back together. The color will change to a light tan and you will know the toffee is almost ready( this happens quickly after the mixture comes back together). To test doneness , dip a spoonful of the mixture and drop it into a cup of cold water. Taste to see if it is crunchy. Once crunchy , it is ready for assembly.
 

Toffee Assembly

* prepared foil lined pan with layered chocolate chips and nuts
* cooked toffee
* 12oz pkg chocolate chips
* half of the walnuts

Directions:

Pour the cooked toffee mixture evenly on top of the walnuts and chocolate chips in the foil lined pan. Cover the toffee with the other package of chocolate chips first and the remaining walnuts last. Cover the toffee with a layer of aluminum foil. Gently smooth the mixture with your hands. The toffee is very hot so use a hot pad to protect your hands from the heat. After the toffee cools break it into bite size pieces.
