5 cups finely sliced green and red cabbage (about 1/4 head each)
1 cup shredded carrots
3 Tbs. minced parsley or chopped chives
1 large apple, cored and chopped into matchsticks
Sunflower seeds (optional)

Directions:

In a serving bowl, mix the cabbage, carrots, parsley, apple and seeds (if using).
 

DRESSING

3-6 Tbs. apple cider vinegar (the more the better)
2 tsp. sugar (or one packet of Splenda)
1/3 cup mayonnaise
1/4 cup canola or grapeseed oil
Kosher salt and pepper
Hot sauce to taste (Tabasco preferred)

Directions:
Directions:
In a small bowl, whisk together the vinegar and sugar until the sugar dissolves.

Whisk in the mayonnaise and oil.

Add salt, pepper and hot sauce to taste.

Taste-test the dressing with a few spoonfuls of slaw.

Mix the dressing into the slaw. (Taste improves over time.)
