¼ cup brown sugar
¼ cup unsulfured mild molasses
1 tsp salt
1 tsp ground ginger
1 tsp ground cinnamon
⅛ tsp ground cloves
⅛ tsp ground nutmeg
1½ cup steel-cut oats
½ cup raisins
2 TBSP finely chopped crystallized ginger
Heavy cream for serving

NIGHT BEFORE:

1. Whisk the sugar, molasses, salt, spices and 6 cups of water and bring to a boil over a medium-high heat. Turn the heat down and simmer for 1 minute, stirring to prevent sticking. Remove from heat and cool.

2. Cover and refrigerate over night.

IN THE MORNING:

3. Bring the covered oatmeal to a boil over medium heat. Uncover and cook, stirring often until most of the liquid is absorbed and oatmeal is pleasantly chewy.

4. Remove from the heat and stir in raisins and crystallized ginger. Cover and let set until more of the liquid id=s absorbed and is cool enough to eat (about 5 minutes)

5. Drizzle with heavy cream and serve.
