2 eggs
1 c. sugar
½ c. butter
1 c. raisins
½ c. nuts, walnuts or pecans
1 lb. mixed candied fruits, cut fruit where necessary
1 small bottle maraschino cherries halved, reserve ¼ c. juice
¼ c. coffee (use 1 tsp. instant coffee to ¼ cup of water)
2¼ c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. cloves
24 whole candied cherries, cut in half

Preheat oven to 275º. Sift together flour, salt, baking soda, cinnamon and cloves. Cream butter and sugar. Add eggs one at a time mixing well after each addition. Combine raisins, candied fruits, cherries and nuts. Add fruit mixture to creamed butter, stir to combine. Add dry ingredients, alternating with coffee and cherry juice. Pour into round tube pan and decorate top with halved candied cherries. Bake for 1½ hours. Cool for about 10 min. then remove from pan to wire rack and cool completely.
