Good poppyseed dressing (Marzetti's)
1 head green or red leaf lettuce
2-3 Roma tomatoes, sliced
1 red bell pepper, sliced julienne
1/2 cup carrot slices
1/2 cup red onion, sliced thin
1/2 cup garbanzo beans, drained and rinsed
1/4 cup sunflower seeds, dry roasted
1 small chevre (goat cheese), 2-3 ounces

optional:
1/2 cups sliced grapes or apples (Denise's version)

Directions:
Directions:
Wash and dry lettuce. Tear into bit sized pieces. Add remaining veggies and toss well. Place mixture on serving plates. Sprinkle with sunflower seeds. Warm goat cheese in microwave, 10 seconds. Spoon a few chunks on top. Drizzle with poppyseed dressing.

This is by far one of the best salads we have ever had. It's my favorite dish on Ocracoke... especially if they're serving Tomato Alfredo Soup on the side!
