4 boneless pork cutlets
Salt and white pepper to taste
1 cup all-purpose flour
3 whole eggs
1 cup milk
1½ cups bread crumbs
¼ lard
¼ cup olive oil

Directions:
Directions:
Pound the pork cutlets to an even thickness. Season the meat with salt and pepper.
Mix well the 3 eggs and the cup of milk for egg wash.
Dredge the cutlets in the flour and dip in egg wash.
Dredge in dry bread crumbs; allow cutlets to rest 30 minutes in the refrigerator.
Melt the lard and olive oil over medium heat in a shallow frying pan; fry the cutlets until they are golden brown. Serve with a layered garnish of a lemon slice topped with a tomato slice topped with a cucumber slice and an anchovy.
