1 lb. small carrots, peeled and trimmed
2 T. olive oil
2 T. honey
salt and pepper to taste
cooking spray
optional garnish: chopped parsley

Directions:
Directions:
1. Preheat oven to 400º. Line a baking sheet with foil and coat with cooking spray.

2. Place carrots in a single layer on the baking pan.

3. In a small bowl, mix together the olive oil, honey, salt and pepper. Brush the honey mixture over the carrots turning to cover all sides.

4. Bake 25 - 35 minutes or until carrots are tender and browned. Roasting time may vary depending on the size of the carrots.

5. Remove from oven and sprinkle with parsley if desired. Serve immediately.
