1 package medium lukshen
1 bag frozen broccoli florets
1 1/2 Tbsp margarine
1 1/2 Tbsp flour
1 cup non dairy creamer (coffee whitener)
3 eggs
1/2 cup mayonnaise
2 Tbsp onion soup mix

Directions:
Directions:
Defrost frozen broccoli and cook up noodles according to package directions
In small pot, melt margarine, add in flour and stir until mixture thickens (looks pasty)- on low flame.
Immediately add in creamer. Bring to a boil and let simmer 1 minute, until thickened.
Shut flame and let cool for a few minutes (very important that it cools off)
Then add in eggs, mayonnaise and onion soup mix
Mix sauce and pour it over the lukshen, add in the broccoli.
Spray a 9x13 pan with Pam, pour lukshen mixture into pan (or 2-9" pans)
Bake on 350 for 1 hour
