4 large eggs (room temperature)
½ cup all purpose flour
½ cup heavy cream
½ cup pure maple syrup
1 tsp salt
3 Tbsp melted butter
1 large apple, cored and thinly sliced
Cinnamon sugar or confectioner's sugar for dusting

Directions:

1. PREHEAT OVEN TO 425ºF

2. Combine the eggs, flour, cream, maple syrup, and salt in a blender. Blend on high to combine well.

3. Melt 1 Tbsp of butter in an 8 inch cast iron skillet or oven-proof nonstick skillet. Add the apple slices and sauté until soft and slightly brown for about 5 minutes.

4. Whiz the batter in the blender for 30 seconds until frothy. Pour the batter in the skillet over the apples until bottom of skillet is covered.

5. Bake in oven until the pancake is puffed, golden, and set for 12-15 minutes. Remove from oven and let set for a few minutes.

6. Invert over large plate. Sprinkle generously with cinnamon sugar or confectioner's sugar, cut into wedges and serve.

7. Repeat steps 3-6 until all batter is used.

This is a version of a French recipe called Clafoutis. They are AMAZING!!! Very easy, but a bit time consuming, I reserve this recipe to help celebrate Christmas Day.
