Sweet Chili Garlic Shrimp Recipe

1 pound of shelled and deveined shrimp, tail on
3 cloves garlic, minced
3/4 tsp salt
1 tsp black pepper
2 tbsp cornstarch
3 tbsp vegetable oil

Sauce:
3 tbsp Thai sweet chili sauce
1/2-1 tsp Sriracha sauce to taste
1 tbsp lime juice
1 tbsp granulated sugar
Pinch of salt

Drain the shrimp on paper towels until totally dry.
Mix all the sauce ingredients in a small bowl and set aside.
Mix the salt, pepper and cornstarch in a medium bowl, and toss the shrimp to lightly coat right before cooking.
Heat a medium sized skillet with 2 tbsp oil on medium high heat until the oil is shimmering.
Add the shrimp to the hot oil and pan sear on both sides until slightly brown. May need to do this in two batches.
Remove shrimp from skillet.
Wipe the skillet with a paper towel and reheat the skillet on medium high heat with remaining 1 tbsp vegetable oil.
Saute the garlic until aromatic or slightly browned.
Add the shrimp back to the pan and add the sauce. Stir to combine well. Remove from heat.
Serve immediately.
