1 c. all-purpose flour
1½ tsp. baking powder
3 T. powdered sugar
¼ tsp. salt
1 tsp. cinnamon
1 tsp. vanilla extract
1/3 c. milk
1 lg. egg
½ c. frozen wild Maine blueberries
maple syrup

Directions:
Directions:
Mix all dry ingredients. Add milk and vanilla to egg and beat well, slowly stir into dry ingredients. When batter is smooth, fold in blueberries until mixed evenly. Drop 2 oz. scoops slowly into 360 degree vegetable oil, and cook until golden brown. Remove fritters and drain off any excess oil. Serve with a generous portion of warm Maine maple syrup.
