1 c. real bacon bits
¼ c. chopped onion (or 1 T Dried minced onions)
½ tsp garlic, minced
8 eggs, beaten
½ tsp salt
¼ tsp ground pepper
24 ounces thawed shredded hash browns
2 c. cheddar cheese, shredded
1½ c. small curd cottage cheese
1¼ c. Swiss cheese, shredded

Directions:
Directions:
Preheat oven to 350 degrees. Spray 9 x 13 casserole dish with cooking spray. In large bowl combine all ingredients. Pour in baking dish, tamp down evenly. Bake uncovered for 50-60 minutes or until knife comes out clean in center.
Let stand for five minutes before serving. Cut into squares. Can be prepared the night before and stored in the refrigerator prior to baking. Set out for 30 minutes before baking, if refrigerated.
