3 c. shredded hash brown potatoes
1 can evaporated milk
3 T. vegetable oil
1½ c. shredded cheddar cheese
2 c. chopped broccoli
dried parsley
1 c. chopped ham
salt & pepper
4 eggs, beat well

Directions:
Directions:
Preheat oven to 350. Mix hash brown potatoes and oil together. Press into prepared 9” pie pan forming a crust (bottom & sides). Layer the 2 C. broccoli then the 1 C. chopped ham on the hash brown potatoes. Whisk together eggs, evaporated milk, and salt and pepper. Pour over the ham. Sprinkle cheese on top. Then sprinkle with parsley. Bake at 350 degrees for 45 minutes or until middle is set. Let rest for 10 minutes before serving.
