2 c. old fashioned oats
¼ tsp. sea salt
½ c. slivered almonds
1 large egg
⅓ c. dried cranberries
2 c. milk (can use 1 C. of eggnog,
1 c. milk)
1 tsp. baking powder
1½ tsp. pure vanilla
1½ tsp. cinnamon
3 c. diced apples
½ tsp. nutmeg
¼ c. lightly packed brown sugar

Preheat oven to 350 degrees. Grease a 9" x 9” pan. In a large bowl, mix together the oats, ¼ C. of nuts, dried cranberries, baking powder, cinnamon, nutmeg and salt. In another bowl, whisk egg and then add milk and vanilla till thoroughly blended. Sprinkle half of the diced apples over the bottom of the baking dish. Cover the fruit with the dry oat mixture. Slowly drizzle the milk, egg mixture over the oats. Scatter remaining apples and nuts over the top and sprinkle the brown sugar evenly over all. Bake for 35-40 minutes or until the oat mixture is just set in the center. Remove from the oven and let cool for a few minutes before serving.
